Olive Oil Processing

High-quality extra virgin olive oil is produced through a carefully controlled mechanical process that preserves its aroma, flavor, and nutritional value.

Washing

Fresh olives are washed to remove dirt, leaves, and other foreign materials. This step ensures cleanliness and prevents defects in the final oil.

Crushing

The clean olives are crushed, including the pits, to form an olive paste. Crushing breaks the olive cells and releases the oil droplets.

⁠Malaxation

The olive paste is gently mixed for 28 minutes. During cold extraction, the temperature is kept below 24 °C to preserve aroma, flavor, and antioxidants.

Centrifugation

The paste is spun in a centrifuge to separate the oil from water and solid residues. This is a purely mechanical process with no chemicals involved.

Filtration & Storage

The oil may be filtered to improve stability, then stored in stainless steel tanks. It is protected from light, heat, and oxygen to maintain quality.
